Health Friendly Way to Include Watermelon in your Diet this Season

Drink your way to good health with these recipes:

1. The Pink Lady


• Watermelon pieces (7-8 deseeded)

• Honey (1 tablespoon)

• Mint leaves (2-3 crushed)

• Ice cubes (3-4)

Preparation Method:

Step 1 – Blend all the ingredients in a blender and serve chilled.

2. Watermelon Cooler


• Seedless watermelon chunks – 3 cups

• Lemonade – 1 ½ cups

• Fresh mint – ½ cup

Preparation Method:

Step 1 – In a blender, puree the watermelon and lemonade; strain if desired.

Step 2 – Stir in the mint and serve over ice.

3. Watermelon Salsa

• finely diced seedless watermelon – 3 cups

• jalapeno peppers, seeded and minced – 3

• chopped coriander – 1/3 cup

• lime juice – 1/4 cup

• minced red onion – 1/4 cup

• teaspoon salt – 1/4

Preparation Method:

Step 1 – Place watermelon, jalapenos, cilantro, lime juice and onion in a medium bowl

Step 2 – Stir well to combine.

Step 3 – Season with salt.

Step 4 – Serve at room temperature or chilled.

4. Watermelon Salad


• Red Onion (halved and thinly sliced) – ¾ cup

• Fresh Lime Juice – 1 tbsp

• Watermelon (seeded and cubed) – 1½ quarts

• Crumbled Feta Cheese – ¾ cup

• Pitted Black Olives (halved) – ½ cup

• Fresh Mint (chopped) – 1 cup

• Olive Oil – 2 tbsp

Preparation Method:

Step 1 – Put the onion slices in a small bowl and add the lime juice.

Step 2 – Mix well.

Step 3 – Let the mixture stand for 10 minutes.

Step 4 – The acid of the lime will calm the flavour of raw onion.

Step 5 – Take a large bowl and combine watermelon cubes, feta cheese, black olives, onions and mint together.

Step 6 – Drizzle olive oil over the salad and toss to blend the ingredients.

Step 7 – Serve immediately.

5. Watermelon Rosemilk


• Watermelon – 2 pieces

• Milk – 1 litre

• Rose colour – a drop

• Rose essence – 1/4 tsp

• Sugar/honey – 1 tablespoom

Preparation Method:

Step 1 – Peel skin of watermelon.

Step 2 – Cut one piece finely.

Step 3 – Extract juice out of another piece.

Step 4 – Boil milk in a pan.

Step 5 – When milk starts thickening, add sugar, stir well and when sugar dissolves, switch off the stove.

Step 6 – When cool, add rose essence, rose colour, watermelon juice, water melon pieces and mix well.

Step 7 – Store in the fridge and serve chilled.
